Thanks to Jan, here's another white paper available on VoIP security. This one is from AT&T.

Voice over IP Security: What are the Risks and Solutions?
Overview: To secure VoIP, both IP and VoIP-specific security procedures and best practices must be deployed at potential points of vulnerability, where the service or infrastructure may be susceptible to known or presumed attacks.

Threats to VoIP can be grouped into three primary areas:
  • Denial of Service
  • Fraud and Abuse
  • Data Confidentiality and Privacy
